POTATO SOUP |

| Preparation Time 15 minutes - Cooking Time 20 minutes - Ingredients: Potatoes - clean, peel if necessary, cut into small pieces, put into tall pot; Onion, Parsnip, Carrot, Celery stalk - clean, cut into small pieces and add to pot; Vegetable broth - add to veggies and cook until veggies are soft. Add spices: Cumin, pepper, fennel and garam marsala Optional: some heavy cream Now, blend everything into a creamy soup. You may want to top it with some fresh chopped chives or parsley on the plate; also a scoop of sour cream would be great for looks and taste. Enjoy NOTES Potatoes are very low in Saturated Fat, Cholesterol and Sodium. They are also a good source of Dietary Fiber, Vitamin B6, Potassium; and a very good source of Vitamin C. Potatoes are a complex carbohydrate which are a vital part of a healthy diet, because they - are assimilated more slowly; - have less dramatic effect on blood sugar levels; - are less processed; - include a variety of other nutrients.
